What Is Magic Cake?
Magic cake (or Gâteau Magique) is a classic French dessert named for its almost magical transformation during baking. From one single batter, three distinct layers form on their own—no layering or separate baking required.
As it bakes, the cake naturally separates into:

a light, airy sponge cake top
Despite breaking a few traditional baking “rules,” magic cake is surprisingly forgiving. As recipe developer Margaret Knoebel notes, “Don’t be scared when the batter is thin or there are lumps of egg white—it will all turn out delicious.”
The flavor is gentle and lightly sweet with a hint of brown sugar. Magic cake is delicious served chilled or at room temperature, plain or topped with berries and a dusting of confectioners’ sugar.
